Custom Cut and Wrap

If you elect to use the most popular cut and wrap option, after the auction you will be asked to select a butcher shop where the animal will be sent to be cut and wrapped.  After the animal has been harvested and delivered to the butcher shop, they will call you for your cutting instructions, typically this is 1 to 2 weeks after the auction.  They will ask how you want things packaged, do you want hams or bacon smoked and so on.  Do not worry they will walk you through this process and answer any questions you may have. There are lots of choices here and some of them will affect the total cost, again do not worry they are very helpful. They will then let you know approximately when the meat will be read for pick up.

You can estimate the cost for cut and wrap to be approximately $2.25 per pound of meat. Note this fee is paid directly to the butcher at a later date, not the Santa Clara County Fair at the auction.

When you pick up your meat it will be frozen so plan accordingly to get to get it home.  If you have questions about this, you can ask the butcher shop when you give cutting instructions.

While this will vary from animal to animal based on many different factors, here is the average amount you could expect from the typical animals in each species from a whole steer, hog, sheep, or goat.

Beef (Steer): 1,250 Lbs

  • Roasts: 182 lbs
  • Ground Meat: 114 lbs
  • Lesser Cuts: 88lbs

Pork (Hog): 250 Lbs

  • Chops: 38 lbs
  • Picnic & Butt: 40 lbs
  • Sausage: 20 lbs
  • Lesser Cuts: 8 lbs

TOTAL: 171 LBS. OF MEAT

Lamb: 125 Lbs

  • Chops: 38 lbs
  • Legs: 17 lbs
  • Stew & Etc.: 15 lbs

TOTAL: 70 LBS. OF MEAT

Goat: 95 Lbs Live

  • Chops: 28 lbs
  • Legs: 13 lbs
  • Stew & Etc.: 15 lbs

TOTAL: 56 LBS. OF MEAT

***Many factors affect the amount of the various meat cuts obtained from a carcass. Factors include weights, sex, degree of finish and cutting method used in preparing the meat for the freezer. Processing prices listed are approximate and will be finalized at the sale.
